Also, if you squeeze juice against a candle it will burn all the brighter.

Some wines are more sparkling than others because they have been bottled early. They contain more carbonic acid and it makes foam when you shake the bottle. I doubt he is referring to sparkling wine, as its alleged inventor, Dom Pérignon, was born in the 1630's.
